Ingredients

85g good-quality plain dark chocolate (chocolat de ménage)
50g butter
300ml full-cream milk
50g caster sugar
2 eggs, separated
1/2 teaspoon vanilla essence
150g fresh white breadcrumbs

Cooking Instructions

Butter a 850ml pudding basin well
Melt chocolate and butter in a basin over a saucepan of hot water (use microwave instead).
Remove chocolate from heat and stir.
Warm milk in a saucepan and add gradually to chocolate mixture.
Stir the sugar.
Beat egg yolks and add vanilla essence. Stir into chocolate mixture.
Add breadcrumbs.
Whisk egg whites until stiff and fold gently into pudding mixture.
Turn into prepared basin and cover securely.
Steam 1,5 to 2 hours until well risen and springy.
Serve hot with cold whipped cream.
