115g butter
115g caster sugar
2 eggs
115g self raising flour ( 1 level coffee spoon of raising powder for every 50g of flower)
pinch of salt
1-2 tablespoons cold water
3 tablespoons of golden syrup

Cooking Instructions

Serves 6

Butter an 850 ml pudding basin thoroughly.
Cream butter and sugar together until pale and fluffy.
Beat eggs and add a little at a time to creamed mixture, beating well between each addition
Sieve flour and salt together and careful fold into mixture using a metal spoon.
Add enough water to make a soft dropping consistency.
Spoon golden syrup into the buttered basin, then pour on the sponge mixture.
Cover securely (baking paper folded in two and held with a rubber band).
Steam (bain-marie) for 1,5 2 hours until well risen and spongy.
Serve with vanilla custard or cream.
