4 large tomatoes
4 eggs
4 teaspoons of hashed Parsley
4 teaspoons of hashed coriander or shiso
some fresh cheese (cantadou) or butter
some grated cheese (gruyère)
salt and peper

Cooking Instructions

Cut the top ("head") of the tomatoes
Empty the inside without making a hole
Salt the inside and put up side down in a bowl for 15 minutes to let water go out.
Preheat the oven 240°C
Dry the inside of the tomatoes with some kitchen paper
Peper the inside

Add in each tomatoes :
1 teaspoon of minced parsley
1 teaspoon of minced shiso or coriander
1 teaspoon of cantadou

Put the tomatoes in a baking tray and brake an egg in each one

Cook in the oven for 15 minutes

Add some grated cheese on each tomato and grill until it takes a nice color.

Many other fillings can be added. Why not some bacon ?
